HOW TO USE LONG PEPPER LEATHER?
Long Pepper leather is very versatile, and allows you to discover Long Pepper in both savory and sweet preparations!
To do this, simply crush it directly with your finger. If your peppercorns are a little harder or thicker, you can cut it finely with a knife, or even crush it in our Sugar Palm Wood Mortar . Our long pepper leather can therefore be sprinkled on a multitude of dishes:
Here are some ideas for using Long Pepper leather simply and deliciously, but as always, don't hesitate to experiment in the kitchen!
- It will deliciously spice up a carpaccio, a confit or a duck breast, where its sweet aromas and its strength will counterbalance the rich side of the duck, or other fattier poultry.
- In a shrimp salad, it will add a nice punch. It goes particularly well with citrus fruits, so don't hesitate to add some to your salad!
- More surprisingly, it adds a touch of pep to a chocolate fondant, to impress your guests. We love adding a little Kampot fleur de sel to intensify the flavors even more!
Alternatively, you can infuse it into dishes that take longer to cook, such as:
- A bone or vegetable broth that provides many benefits during the winter. Long pepper is known for its many benefits and is a powerful ally during the colder weeks.
- It can also be used in onion jam or quince confit, which in turn go very well with duck, foie gras, rillettes, and all winter delicacies.
STORAGE TIPS FOR LONG PEPPER LEATHER:
To properly preserve Long Pepper leather, keep it in a cool, dry place, away from light. We recommend storing the Long Pepper flakes, our "leather," whole in a jar.
You can pour them into the 50 gram kraft tube, which is food-safe. Or, into a glass jar. Be careful though, we advise you to keep it away from light . If you opt for a glass jar, be sure to store it in a cupboard if your kitchen is exposed to light!
