To produce long pepper pearls, we harvest the fruit of the long pepper plant when it is fully ripe. Pepper Pearls are tiny peppercorns, about the size of a poppy seed. They are found under the outer shell of the long pepper, which closely resembles a hazelnut catkin.
Our workers carry out meticulous work, collecting these tiny long peppercorns from the red fruit. They are then washed and dried in the sun for several days.
Long peppercorns have distinct and unique aromas that set them apart from other pepper varieties, especially Kampot Pepper. Being the seeds of the Long Pepper plant, our peppercorns will surprise you with their intense flavor.
On the nose, anise and menthol notes stand out. On the palate, the first impression is sweet, followed by a spicy note.
- Long peppercorns are often described as having citrus notes, particularly lemon. This lemony note brings a freshness and liveliness to their flavor.
- Long pepper can also have floral undertones, sometimes reminiscent of lavender or violet. This adds a delicate dimension to its flavor profile.
- Although less intense than black pepper, long pepper still has a distinctive spicy note.
Long Pepper Pearls are a unique way to discover a new variety of pepper, Long Pepper, and are very easy to cook because they are already ready to use! They can simply be added at the time of serving.
For example, we often sprinkle long peppercorns on:
- They will bring a unique aroma to winter salads, with walnuts, goat cheese, and squash. Or in summer, on sautéed zucchini, served in a salad.
- For an original aperitif, add long peppercorns to your charcuterie such as rillettes or pâté to give lightness to preparations rich in fat.
- You can add Long Pepper pearls to fresh goat cheeses, or even creamy cheeses that are roasted in winter.
- Raw, on a carpaccio or tartare, or on a nice piece of cooked red meat, like beef or even game, which goes particularly well with long pepper.
- Add a few pearls of long pepper to red fruit compotes or winter fruits, such as pears or apples.
