Kampot Pepper is one of the few peppers in the world to benefit from a Protected Geographical Indication (PGI), guaranteeing its authenticity and quality. Its unique flavor comes from an exceptional terroir, influenced by the sea, an ideal climate, and rigorous cultivation practices, similar to those of fine wines. Controlled by the KPPA, this pepper is the result of respectful know-how and strict specifications. La Plantation, an active member of the Kampot Pepper Association's Board of Directors, helps promote this prestigious appellation worldwide, while improving production quality and supporting small local family farms. The Kampot Pepper PGI, registered in 2010 in Cambodia and in 2016 in Europe, guarantees a unique origin and expertise. During the harvest, from late February to June, each bunch is carefully hand-picked, ensuring a rigorous selection of ripe grains to preserve all the aromatic richness of this exceptional pepper.
The daily harvest of Kampot Pepper is processed the same day to ensure freshness and quality. After being deseeded, the grains are carefully washed, scalded, and then sun-dried for 2 to 3 days, with regular raking for even drying. This natural process intensifies the unique flavor and aroma of this exceptional pepper. Only the dark black grains, larger than 4 millimeters and of optimal density, are hand-selected and marketed under the Kampot Pepper appellation, thus ensuring impeccable quality.
